Chocolate Fix Hot Chocolate

Mona, proprietor of the Chocolate Fix in downtown Granville Falls, NC, creates a luscious hot chocolate.  She reminded me that chocolate, like tea and coffee, can be brewed then served over ice for a refreshing summer drink.  Yum!

Chocolate Fix Hot Chocolate

In the top of a double boiler, melt two ounces of good Belgian chocolate – you choose the type – with 1/2 cup of boiling water. 

Scald 3 1/2 cups of half and half (or milk, but Mona uses cream) with one vanilla bean.  If you don’t have the beans, add 1 teaspoon of vanilla when you blend the chocolate with the cream later on.

Dissolve 1/4 to 1/3 cup of sugar into the hot cream/milk.

Then, if you used the vanilla bean, take it out!  While the cream is hot, pour it over the smooth melted chocolate and beat well with a wire whisk until blended. Serve in a heated cup with whipped cream (the real stuff, please) and a sprinkling of cayenne to taste. Garnish with grated chocolate.

To serve iced chocolate, prepare as above and chill.  Serve over crushed ice and top with whipped cream and grated chocolate. 

This recipe makes about six servings, unless you’re treating chocoholic friends. In that case, make a double batch.

Mona says you can also add some fresh strong coffee to the pot for an additional kick.
